So, our parsnips have been in for months now and looked like they were happily growing. It is the first year that gardening club has attempted them so we weren’t sure what to expect when we dug them up. Our fantastic cookery TA, Victoria was on standby to make soup (with a few shop bought parsnips just in case!)
We braved the cold and went out into the garden and started digging….Well, I don’t think any of us could believe our eyes! They just got bigger and bigger as we pulled them up! A few strange curly ones aside, we really did have a bumper crop!
Back into the warm and Victoria led the session where we made parsnip soup and bread rolls. The perfect snack for a cold winter lunchtime.
We even had enough left over to sell at our winter fair.
